Turkey Sausage sandwiches for the kids…

Community Foodbank of NJ is the largest hunger relief organization in the state of New Jersey. I continue to be blessed working with the Community Foodbank chefs to develop delicious, healthy meals for children and seniors. This week we worked on creating turkey forcemeats, making chorizo sausages, sweet Italian sausages and bratwurst style sausages.

Italian Sausage Patties

  • 1 lb lean ground turkey

  • 1 tsp kosher salt

  • 1/4 tsp fennel seeds

  • 1/4 tsp black pepper, ground

  • 1/4 tsp sweet Spanish paprika

  • 1/2 tsp honey

  • 1 tsp breadcrumbs (I like to use pea protein to bind)

  • 2 Tbsp apple sauce (I like Musselman's)

    Mix together well and form patties. Grill, pan fry or bake on parchment lined sheet pans until browned. Enjoy now and freeze a few for next time. For R&D, we worked on a few dozen chorizo turkey sausage burrito sandwiches with salsa and an Italian turkey sausage sandwiches with homemade marinara and melted mozzarella.

    Next we begin making the sausages in the thousands.
