Carrot Cake is my favorite Vegetable! so…. When life gives you a harvest of sweet, carrots… make carrot cake!

My Mom Claire’s famous recipe:

Blend 2 Cups AP Flour, 2 Cups sugar, 2 tsp baking soda, 2 tsp cinnamon, 1 Cup oil and 4 eggs together, add 3/4 Cups drained, crushed pineapple, 2 Cups grated carrots (from your garden), 3/4 Cup golden raisins & 3/4 Cup chopped, toasted walnuts. Pour batter into oiled, loaf pans and bake for 45 min. at 350 F until cooked through.
