Asparagus & Mushrooms on my Big Green Egg

I’m pretty excited to be a Culinary member of the Big Green Egg. I’ve been relearning a lot about grilling and roasting-the flavors are amazing with a small amount of smoke. I’ve begun making pizzas again and decided to develop a few Spring meals with local asparagus and herbs from my garden. Asparagus are just starting to pop out of the ground in New Jersey…. and these are delicious!

I like paring asparagus with mushrooms and salmon so decided to create a pizza with ricotta cheese, grilled mushrooms & asparagus, prosciutto and pine nuts, topped with a little Asiago cheese and EVVO. The other pizza has grilled salmon fillet with asparagus and mushrooms. I generally don’t serve seafood with cheese but it’s pizza so hey…. I loved spooning mascarpone onto the dough and baking.
